So, if this is what her claw weapons are supposed to look like, how come we never see this giant mechanical glove thingy when she attacks?

Because this claw is only in the official artwork, compendium, and Drama CD. She uses it in the Drama CD, l think Old Man Roy makes it for her along with Nei's signature 2-pronged claw, the Nei Claw.
