Why do they call it LEGEND OF ZELDA, when the game focuses upon LINK? And if Zelda is always captured or degraded by Ganon, why is she considered a LEGEND?

"Legend of Zelda" is a much more iconic title than "Legend of Generic Village Boy who through a series of coincidences becomes quite involved in matters that are seemingly beyond him".
Considering you can change his name, it being the same person isn't necessarily Canon. Zelda is always Zelda, however.

I meant no disrespect, those two questions always made me wonder why it's LEGEND OF ZELDA, when those two things kept recurring. It'd be nice to have a game where LINK is finally kidnapped and ZELDA has to take the sword and shield. THEN she'd become a legend ;o

Shigeru Miyamoto has stated that her name was inspired by Zelda Fitzgerald (F. Scott Fitzgerald's wife). Basically this is only reason why it is called The Legend of Zelda. He liked the name and decided to name the princess and the game after her.

"Legend of Zelda" means Legend ABOUT Zelda, not "Zelda is Legend" -.- fucking understand what you are reading... And further drillng the topic, the actual legend is about triforce and history of Hyrule, where Zelda as one of the sages and member of royal family is somehow related to it.
